I am Chef de cuisine in Michele's at Dover Downs
I graduated culinary school from Lycee St-Exupery in Champagne, France in 1986. After three years of training I worked in Champagne region , French Riviera and in the Alps close by Albertville where they had the Olympics in 92.
My specialties are mostly French and I love French eastern dishes for winter and Mediterranean cooking in spring and summer but with great base I can touch all type of cuisine.
What else? I am an activist for better healthy living where food is the major ingredient. Change your eating habits, be happy. I think it is very important to educate kids at a young age to open their mind about nutrition and how fun it is to play with food. I started Chefs fight and I will fight to make it successful.
